You know I’m obsessed with Mexican food. I make it all the time. The best part is that a lot of Taylor’s friends are from Mexico and they love my cooking.

That’s right. I have street cred.

Or kitchen cred.

I may be living in Mexico City this summer for a while.

(Long story and I have no details for you yet, so don’t bother asking.)

If I do, I will be learning to cook in Mexican kitchens.

Which will give me Mexican kitchen street cred.

Anywho, I made this rice last night and it was ridiculous. Flavors for days. I also made my chicken burritos. Someday I’ll share that with you, but not yet. It’s a family secret. Maybe on my death bed.

Ingredients

  • 1 cup long grain white rice
  • 1 tablespoon vegetable oil
  • 1 1/2 cups chicken broth
  • 1/2 onion, finely chopped
  • 1/2 green bell pepper, finely chopped
  • 1 fresh jalapeno pepper, chopped
  • 1 tomato, seeded and chopped (I didn’t use this. Changes the texture. Makes me queasy.)
  • chicken bouillon powder (I sort of guess)
  • salt and pepper to taste
  • 1/2 teaspoon ground cumin
  • 1/2 cup chopped fresh cilantro
  • 1 clove garlic, halved

Directions

  1. In a medium sauce pan, cook rice in oil over medium heat for about 3 minutes. Pour in chicken broth, and bring to a boil. Stir in onion, green pepper, jalapeno, and diced tomato. Season with bouillon cube, salt and pepper, cumin, cilantro, and garlic. Bring to a boil, cover, and reduce heat to low. Cook for 20 minutes.

Most of the measurements in this recipe are suggestions to me. I don’t like to be bound by my utensils.

Here’s a huge secret. Don’t open the lid until it’s done. If you do you will have mush rice, which is disgusting.

Also, don’t add the cilantro….

until the rice is all done and fluffed.

Cilantro deserves respect and a place of honor.

Did you know that cilantro is used in Asian food as well?
